Coconut-Oatmeal Cookies

Ingredients:
- 1 cup Brown Sugar
- 1 cup White Sugar
- 1 cup Unsalted Butter
- 1 teaspoon Vanilla Extract
- 2 pieces Eggs
- 1 cup Desiccated Coconut
- 3 cups Oatmeal
- 2 cups All Purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
Procedure:
- Cream brown sugar, white sugar, butter and vanilla extract.
- Whisk in the eggs to the creamed sugar-butter mixture.
- Mix desiccated coconut, flour, baking soda, baking powder and salt in a separate bowl.
- Mix it in to the egg-sugar-butter mixture.
- Add the oatmeal to form cookie dough.
- Preheat oven to 180 degrees Celsius.
- Chill cookie dough for 30 minutes.
- With a teaspoon, scoop dough and from into balls and flatten slightly with a fork. (Adjust size according to your preference.)
- Bake cookies for 8-12 minutes. (Adjust baking time accordingly.)
