Coconut-Oatmeal Cookies

Ingredients:

  • 1 cup Brown Sugar
  • 1 cup White Sugar
  • 1 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 2 pieces Eggs
  • 1 cup Desiccated Coconut
  • 3 cups Oatmeal
  • 2 cups All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt

Procedure:

  1. Cream brown sugar, white sugar, butter and vanilla extract.
  2. Whisk in the eggs to the creamed sugar-butter mixture.
  3. Mix desiccated coconut, flour, baking soda, baking powder and salt in a separate bowl.
  4. Mix it in to the egg-sugar-butter mixture.
  5. Add the oatmeal to form cookie dough.
  6. Preheat oven to 180 degrees Celsius.
  7. Chill cookie dough for 30 minutes.
  8. With a teaspoon, scoop dough and from into balls and flatten slightly with a fork. (Adjust size according to your preference.)
  9. Bake cookies for 8-12 minutes. (Adjust baking time accordingly.)
